CREMA CATALANA
Recipe for 6 persons
Ingredients:
6 eggs
1 l of milk
10 cl of liquid cream
10 g of starch
150 g of sugar
1 branch of cinnamon
1 skin of lemon
Elaboration:
Put the milk and the liquid cream, together with a skin of lemon and the branch of cinnamon, in a pot |in the fire; let it boil and switch off the fire immediately. Afterwards, let it cool and coleu it.
Aside, sort out the rust from the clear ones. In a casserole or saucepan where you will make the cream, and out of the fire, mix the rust with the sugar and stir it very well until the mixture starts to turn itself clearer of a color. Apart, dilute the starch with some milk, add it to the rust mixed with sugar, stir it well and add slowly the filtered milk. Put it in a fire very soft and, non-stop of stirring, take it in the boiling point (you have to watch that it does not manage to boil for you, because the eggs would cut). Put the cream in individual bowls and once cooled shake off sugar over; it only remains you to burn it with the shovel of burning very hot.
